We love hummus at our house, and this recipe adds a very nice twist to your traditional hummus. I have adapted it slightly from ExtraVeganza by Laura Matthias. I actually met Laura when I was in photography school in Victoria, BC, and ended up photographing many of the recipes for her cookbook. I love how fresh this hummus tastes. It is a great way to incorporate extra greens into your diet. The wild orange essential oil adds a beautiful flavour as well.
Spinach is a fantastic super food with many health benefits and great to add to any recipe. Helen Nichols, founder of Well-Being Secrets shares a great article showcasing 34 science-backed health benefits of spinach on her blog. Spinach contains the vitamins A, C, and K, B group vitamins, potassium, magnesium, iron as well as various antioxidants, lutein, Zea-xanthin, fiber, omega-3 fatty acids as well as protein.She shares a bit about the history of Spinach along with the multiple health benefits, how to best grow spinach in your garden and a number of the different varieties of spinach as well, which I found very interesting! Spinach Hummus with dōTERRA wild orange essential oil
Ingredients:
2-3 cloves garlic
14 oz can garbanzo beans, drained & rinsed
1/8 tsp ground cumin
5 tbsp olive oil (*I love Barrie Olive Oil – they carry the highest quality olive oil and balsamic)
3 tbsp freshly squeezed lemon juice
2 drops dōTERRA wild orange essential oil
2 tbsp tahini
1 tsp fine sea salt
1 cup fresh cilantro
1 cup fresh spinach, stems removed, chopped
2 green onions, chopped
Directions:
Place all ingredients in a food processor and blend until creamy and smooth. Scoop into a serving dish, garnish with fresh cilantro. Serve with toasted pita bread, baguette, or my favourite artisan sourdough bread by Homestead Artisan Bakery, crackers or vegetable sticks.
