Avocado toast has to be one of my favourite breakfasts. So simple to make, and so delicious. Avocados are full of antioxidants, healthy fats, vitamins, and minerals, and are great for optimum healthy and gorgeous skin.
Avocado toast with poached egg, roasted tomato, and chimichurri
- Grill a slice of baguette or your favourite fresh baked loaf in a cast iron pan or broil in oven.
- Brush with olive oil. (*before grilling or after broiling)
- Smash fresh avocado over toast gently with a fork.
- Add one soft poached egg.
- Layer slow roasted cherry tomatoes, pumpkin seeds, black sesame seeds, and top egg with parsley and cilantro chimichurri sauce.
- Finish with a dusting of freshly ground black pepper.
Avocado toast with roasted tomato, feta cheese, parsley, and balsamic.
- Grill a slice of baguette or your favourite fresh baked loaf in a cast iron pan or broil in oven.
- Brush with olive oil. (*before grilling or after broiling)
- Layer toast with thinly sliced avocado.
- Top with fresh parsley, roasted cherry tomatoes, and feta cheese.
- Drizzle balsamic vinegar glaze overtop.
Avocado toast with roasted beet hummus, pea shoots, parsley, and dill.
- Grill a slice of baguette or your favourite fresh baked loaf in a cast iron pan or broil in oven.
- Brush with olive oil. (*before grilling or after broiling)
- Spoon a generous layer of roasted beet hummus on toast.
- Layer thinly sliced avocado slices over the hummus.
- Top with local pea sprouts, fresh dill and parsley, and toasted pine nuts.
Avocado Toast with radish and shaved heirloom carrot.
- Grill a slice of baguette or your favourite fresh baked loaf in a cast iron pan or broil in oven.
- Brush with olive oil.
- Layer toast with thinly sliced avocado slices.
- Place thinly sliced radish and add shaved heirloom carrot on top.
- Sprinkle with toasted pine nuts and black sesame seeds.
